Jonathan Zapata is part of the FUDAM Association. His farm, Angostura, is located in San Pedro de Cartago, Nariño and currently consists of 1.5 hectares under production and consists of about 5,000 trees. Jonathan incorporates an 24-hour fermentation process followed by drying the beans in raised parabolic beds in order to produce the best results. He, along with other members of the FUDAM Alliance, provide high quality micro lots and continue to incorporate new and innovative ideas into their coffee processing in order to provide a unique and complex cup.
